Corn coriander kofta with white gravy
Corn coriander kofta is held together sweet corn and coriander with rice flour. It is the healthy and quick option for the kofta. They are served with lip- smacking white gravy. White gravy is a curd based gravy is prominent in north Indian cuisine. It is richer taste with the extensive use of cashew nuts and cream.
Believe me green coloured corn kofta served with richer creamier white gravy makes your guests happy.
INGREDIENTS :
For the kofta
1 American sweet corn
1/2 bowl chopped coriander
1 tsp ginger and green chili paste
5 tbsp rice flour
Salt as per taste
For white gravy
1 cup chopped onion
2 tbsp cashew nuts
2 tbsp melon seeds
1 tbsp poppy seeds
1tbsp chopped garlic
1tsp chopped ginger
Other ingredients :
2 tbsp butter
3 carcardamon
2 cloves
1 bayleaf
2 tbsp finely chopped green chilies
3/4 cup fresh curd
1/4 cup fresh cream
Salt to taste
INSTRUCTIONS :
For kofta :
Blend corn and coriander in a mixie jar.
Add the mixture in a bowl, add salt ginger and chilli paste,rice flour and make a daugh.
Divide into equal portions and make small round kofta.
Heat oil in a pan and fry koftas. Don't fry to much and keep it aside.
For white paste:
Combine all ingredients in a pan ,add water and boil for 10 minutes. You can also pressure cook all ingredients.
Blend in a mixie jar into a smooth jar and keep it aside.
For gravy :
Heat butter in a pan. Add cardamoms,cloves and bayleaf. Saute till aroma release.
Add the prepared white paste and green chillies and saute on medium flame for 4-5 minutes.
Add curd and mix well and stirring
Continuesly.
After 2 minutes add fresh cream and salt and mx it well.
Switch off the flame.
Now add koftas and serve hot with parathas.😊
